Today I am sharing mostly Greek recipes from The Lemon Bowl (healthy made delicious) that will go together with a dessert recipe that I found yesterday and tried last night and we love!

"Growing up, we always had plain yogurt in the fridge and I still do to this day.  It is the perfect garnish for various Middle Eastern dishes including Lentils and Bulgur Wheat with Caramelized Onions or a piping hot Sfeeha (Lebanese Meat Pie) fresh from the oven.  When Greek Yogurt is used, you don't have to drain the regular yogurt.  We eat Greek Yogurt for the majority of the time and I will be giving a dessert recipe for you to have with this meal (since you'll have so much yogurt on hand)."

"When I have a few extra minutes, I love turning plain yogurt into a delicious side dish by mixing it with cucumbers, lemon juice, garlic and herbs. For an Indian twist, I’ll throw in chopped cilantro and garam masala to create Cucumber Yogurt Raita. For a Syrian twist, I add plenty of fresh or dried mint to create Cucumber Yogurt Mint Sauce (Laban)."

"Today I am sharing the Greek version of cucumber yogurt sauce known as tzatziki which is full of bright and fragrant fresh dill. We love making a big batch and storing it in the refrigerator to use throughout the week. Serve as a dip with veggies or a sauce for Garlic Rosemary Lamb Chops or Beef Shawarma."

"Want to keep it vegetarian? Serve in a pita with hummus and call it a day."


AND your dessert awaits (I suggest that you make these BEFORE you begin to make dinner) so that they will be frozen!


Strawberry Silicon Popsicle Mold

Blended strawberries with Plain Greek Yogurt


Poured mixture in molds
Frozen and Ready to eat!


3-ounce molds

Makes 6 popsicles (3-ounce molds)

1 pint strawberries, hulled and roughly chopped
1/4 cup sugar
1 teaspoon lemon juice
6-8 ounces (about 1 cup) Greek yogurt
Combine the strawberries and sugar in a small bowl. Let stand about 20 minutes to macerate the fruit, stirring occasionally. The fruit will soften and become syrupy.
Pour the strawberries and syrup into a food processor or blender. Add the lemon juice and pulse a few times until the fruit is pureed.
Stir the yogurt into the strawberry mixture until combined. Pour into molds and freeze for at least 8 hours or overnight. To remove, run hot water over the outside of the mold until you can gently pull the popsicle out.

NOTES:

• You can substitute nearly any seasonal fruit (or mix of fruits!) for the strawberries in this recipe.
• For harder fruits like rhubarb and under-ripe peaches, try cooking down the fruit with the sugar and a few tablespoons of water over medium heat. This helps soften them and concentrate their flavor.

REVIEW:  Chardonnay

In the '80s it became a way of speaking to ask for "a glass of Chardonnay" in a restaurant and passé to simply request "a glass of white wine." Chardonnay is the most popular wine in America for a reason: It's cold, fruity and easy to drink. It's pleasant with just about any dish involving cheese, eggs, fish or fowl. Winemakers have divided into two camps over the style of Chardonnay; one school of thought emphasizes the high-toned, steely, fruitlike qualities of the wine with little or no use of oak, while the other emphasizes barrel and malolactic fermentation in addition to the fruit characteristic, which lends the wine a rounder, buttery taste. 

Benchmarks for Chardonnay are (rich and extracted) white Burgundies and (steely and crisp) Chablis. There are fine Chardonnays from just about every region, including Napa, Sonoma, Mendocino, Monterey, Santa Cruz, Santa Barbara and New York.

My deceased Mother In Law, Shirley, God rest her soul, and my husband and I took a weekend trip to Monterey (much to tell about that trip including the aquarium) and we stopped at every sign for wine tasting at wonderful vineyards that we came upon just going up the 101.  

In Monterey we took our last glass and a couple of bottles of Chardonnay to our hotel room.  Good thing the only thing planned that night was a seafood dinner and coming back to the room and drinking through those bottles of wine (in the special wine glasses we bought at one wine tasting rooms.)  I fell in love with Chardonnay that day and night!

I was a little disappointed that this wine was a screw off top.   I guess I'm just used to the bottles with the corks and previous thinking that only good wines had corks.




Once I got past that shock, I poured the glasses for my girlfriend and I used 2 of the 6 wine charms that I had made for our glasses.  As a fun activity, we each made 2 more and she took home the 4 since I could make more of this craft activity on my own.  The instructions that I used can be found here. (come back again this week for the page that is under construction right now).  

I'm not as big a social wine drinker now than I used to be.  Depression meds. and wine are really not to be mixed together.  So I rarely drink wine, but I cook with it a lot!  For instance in this recipe for the cupcakes I had made for she and her husband and kids to take home at the end of our time together.  We made these together to start off our day.  


Pink Chardonnay Cupcakes adapted from All Recipes
Recipe:

Active time: 20 minutes (plus time for decorating)
Start to finish: 1 hour
Makes 20 cupcakes

Ingredients

For the cupcakes
2 3/4 cups all-purpose flour
3 teaspoons baking powder
1 teaspoon salt
2/3 cup butter
1 1/2 cups white sugar
3/4 cup Concannon chardonnay
6 egg whites
4-5 drops red food coloring

For the Concannon chardonnay buttercream frosting*
3 1/4 cups powdered sugar
1 cup butter, at room temperature
1/2 teaspoon vanilla extract
3 tablespoons Concannon chardonnay, at room temperature
4-5 drops red food coloring

Directions
For the cupcakes
Preheat oven to 350 degrees F.  Prepare a cupcake pan with liners.

In a large bowl, cream together butter and sugar until very light and fluffy. In a separate bowl, sift flour, baking powder, and salt together. Alternate adding flour mixture and Concannon chardonnay into the creamed mixture.

In another large bowl, beat egg whites until stiff peaks form. Gently fold 1/3 of the whites into batter to lighten it, then fold in remaining egg whites.  Fill the cupcake liners about 2/3 full.
Bake for 20 minutes, or until a toothpick inserted into the cake comes out clean.

For the frosting
In the bowl of your stand mixer, beat together powdered sugar and butter. Mix on low until well blended, and then on medium for another 2 minutes.  Add vanilla and Concannon chardonnay, beating on medium for another minute. Transfer frosting into a decorating bag fitted with a large star tip, and decorate as desired. Sprinkle with pink sugar and pearls.

*Note: if decorating cupcakes with a swirl (see above photo), you will need to double this frosting recipe. One batch of this recipe yields enough frosting to cover 2 dozen cupcakes with a flat top.

Verbal Vomit and how to Ignore it




The Urban Dictionary says that verbal vomit is, "When any ones mouth runs like diarrhea with useless crap."   I love these two words because when I hear the neighbor across the street yelling at her husband every night (after she's drunk) this is exactly what she does.   And I've noticed that in some groups on Face Book and other social media that some people have the GIFT of Verbal Vomit.

So what do you do when you run across it?  Do you give in and argue with them or do you ignore it and keep going or do you even find that you need to quit a group because there's so much of it going on in the group that you really don't care to stay there and hear it....  I've done all of the above!

What I've find out when I ignore it coming at me, they choke on their verbal vomit!  When I choose to debate the verbal vomit, I always have to let the other person have the last word because it could go on forever.   And last night I left a "good deals group" (that's not the name of it) but it was about the leader posting ads and asking people to buy it to help her make money. Whooooaaaa, that group shouldn't even exist.  She was angry about some person she is battling with who is copying her words on the group and posting them somewhere else and making her look bad...  so she changed the group to Secret... and then posted a nasty note accusing "someone" of being a SPY in the group.   I just quit the group when I saw so many notes being written to her telling what to do to get rid of this person.  I felt like I walked into a Kindergarten class at playtime!  


So here's the clear message...  escape from the Verbal Vomit as fast as you can and don't say anything...  tell it to your husband or wife at home and offline and get it off your chest.   Or go journal it and meditate and quiet your mind.

God speaks and I keep doubting Him




“The Lord said to Moses, ‘How long will these people treat Me with contempt? How long will they refuse to believe in Me, in spite of all the miraculous signs I have performed among them?’” (Numbers 14:11)

As a chronically ill person it is so hard not to get down when things continue to go downhill. No matter what I try more health issues keep popping up. Even though I’ve been working on cleaning up my finances, things are still in bad shape.
It seems everywhere I look evil is prospering and others who aren’t serving the Lord are successful and beautiful. What is going on?

These were my thoughts the last few weeks. Instead of turning off my negative thinking I let myself dwell in these dark thoughts. Needless to say, that really didn’t help my attitude at all. I know full well that when I stay positive and put my trust in God, things go better.

I just so happens that in my daily Bible reading I am currently going through the passages where the Israelites are wandering in the desert. At least seven times the Israelites complained to God about their food, enemies, land and other provisions. And many times they faced God’s judgment for their evil behavior.
Hmmm, does the Israelite behavior sound familiar at all? What have I been doing these last few weeks? I’ve been complaining about my health, finances, food and other provisions. Ouch.
Okay, maybe I need to get my act together too. There’s nothing wrong with making our requests known to God, but then I need to leave it to God and quit bringing it up again and again.

I learned some good reminders from these passages:

1. God was with His people every step of the way. He told them when to camp and when to get up and move.

2. God miraculously provided food provisions every single day. They never went hungry.

3. God provided them with shelter and clothing. He took care of every need they had.

In spite of all God did for them, they still did not trust Him or thank Him for His provisions. The thing that saddens me most is that they missed out on the wonderful blessings God had in store for them–what a shame!

It’s the same for us as well. God is with us every step of the way and He longs to provide special blessings to us if only we will have faith!

Prayer: Forgive my ungratefulness and murmuring attitude. Thank You for always providing just what I need. Amen.

The Fibromyalgia Letter



Hello Family, Friends, and Anyone Wishing to Know Me!
How do I explain this to you my family and friends? This is very difficult to do as my illness is "unseen." So allow me to begin by thanking you for taking the time out of your day to spend some time with me and get to know me better. A person's time is their most valuable asset and yours is appreciated

"Fibromyalgia is a chronic condition characterized by widespread pain in your muscles, ligaments and tendons, as well as fatigue and multiple tender points - places on your body where slight pressure causes pain. Myofascial pain syndrome is a chronic form of muscle pain. The pain of Myofascial pain syndrome centers around sensitive points in your muscles called trigger points. The trigger points in your muscles can be painful when touched. And the pain can spread throughout the affected muscle."



I want to talk to you about fibromyalgia (FM) and Chronic Myofascial Pain Syndrome (MPS). Many have never heard of these conditions and for those who have, many are misinformed. And because of this, judgments are made that may not be correct. So I ask you to keep an open mind as I try to explain who I am and how FM/MPS has assaulted not only my life but those whom I love as well.

I cannot show you a physically open wound to show how much pain I'm in. If I could you would take one look at that, tell me to sit right down, get me a pillow, offer me something to eat or drink and have that concerned and understanding look on your faces. However with Fibromyalgia, you will hear from many people that they would rather have a broken leg any day than suffer the kind of pain these disorders inflict. To me, a broken leg is even a poor example to compare suffering to these disorders and an insult to those of us with those disorders.

You see, I suffer from a disease that you cannot see; a disease that there is no cure for and that keeps the medical community baffled at how to treat and battle this demon, who's attacks are relentless. My pain works silently, stealing my joy and replacing it with tears. On the outside we look alike you and I; you wont see my scars as you would a person who, say, had suffered a car accident. You won't see my pain in the way you would a person undergoing chemo for cancer; however, my pain is just as real and just as debilitating. And in many ways my pain may be more destructive because people can't see it and do not understand....

You must see with your ears and your heart what your eyes cannot see. You must listen carefully to what I am telling you. What I describe to you may not make much sense to you and may be difficult for you to understand. Sometimes it may seem to you to be a different universe that I discuss. Know that it probably is. You don't have to fully understand my universe and you cannot possibly. However hear my pain, listen for red flags always of any danger signals where you may need to help with added assistance. I like to call it "sending in the troops." Anytime I do not seem in touch with reality.

Please don't get angry at my seemingly lack of interest in doing things; I punish myself enough I assure you. My tears are shed many times when no one is around. My embarrassment is covered by a joke or laughter, but inside I want to die. You will hear many things from me that to you seem as easily resolvable. You may wonder why I make the same "wrong" decisions over and over again. Why haven't I learned by this time? Why can't I see the senselessness of my behavior? I may seem to be getting my life together and them bottom out all over again.



Please understand the difference between "happy" and "healthy". When you've got the flu you probably feel miserable with it, but I've been sick for years. I can't be miserable all the time, in fact I work hard at not being miserable. So if you're talking to me and I sound happy, it means I'm happy. That's all. I may be tired. I may be in pain. I may be sicker than ever. Please, don't say, "Oh, you're sounding
better!" I am not sounding better, I am sounding happy.

What is happening here? Am I lazy, stupid, etc? Nope. My physical brain and body is very different than yours. I experience life different than the way you do. I feel different than you do. Most of my "friends" are gone; even members of my own family have abandoned me. I have been accused of "playing games" for another's sympathy. I have been called unreliable because I am forced to cancel plans I made at the last minute because of the burning and pain in my legs or arms and shoulders. The pain can be so intense that I cannot put my clothes on and I am left in my tears as I miss out on yet another activity I used to love and once participated in with enthusiasm. Do I experience mood swings? If I am hurting I may be angry, sad, depressed, or any of the hundred moods in the world. I'll never know what mood I will wake up with? I may treat you cruelly and say horrible things to you; I may ignore you completely, or cry on your shoulder unstopping when I'm in Fibro Flair. You may wonder what you said or did that made me this way. Well you did nothing it's the Fibromyalgia and all its underlining factors causing this.



"While the most predominant symptoms of fibromyalgia include widespread pain and persistent fatigue, the resulting cognitive impairment of this condition may be its most maddening. Commonly referred to as fibro fog, this symptom is a conglomeration of cognitive challenges. Fibro fog is understood to be a physical symptom of fibromyalgia, not a psychological one. Just as no two individuals experience fibromyalgia in the same way, fibro fog also has a varying range of indications, including: Mental confusion, Fuzzy thinking, Short-term memory loss, Inability to concentrate or pay attention, and Language lapses."

This is why I feel like a child at times. Just the other day I put the egg's I bought at the store in the pantry, on the shelf, instead of in the refrigerator. When I talk to people, many times I lose my train of thought in mid sentence or forget the simplest word needed to explain or describe something. Please try to understand how it feels to have another go behind me in my home to make sure the stove is off after I cook an occasional meal. Please try to understand how it feels to "lose" the keys, only to find them in the freezer. As I try to maintain my dignity the Demon assaults me at every turn. I have a physical illness and it isn't my fault and I didn't ask for it I don't want it and I don't deserve it.



"Occurring at the deepest level of the sleep cycle, individuals with fibromyalgia typically lack sufficient restorative sleep. We know that at the deeper levels of sleep, called delta wave sleep, a person's mind conducts internal housekeeping. During delta wave sleep, newly acquired information is assimilated and integrated into the brain. The inability to get sufficient delta wave sleep impairs the ability to recall information and operate at a normal level of mental efficiency."



Sleep, when I do get some, it is restless and I wake often because of the pain the sheets have on my legs or because I twitch uncontrollably. I walk through many of my days in a daze with the Fibro-fog laughing at me as I stumble and grasp for clarity.



Just because I can do a thing one day, that doesn't mean I will be able to do the same thing the next day or next week. I may be able to take that walk after dinner on a warm July evening; the next day or even the in the next hour I may not be able to walk to the fridge to get a cold drink because my muscles have begun to cramp and lock up or spasm uncontrollably. There are those who say "but you did that yesterday!" "What is your problem today?" The hurt I experience at those words scars me so deeply that I have let my family and friends down again; and still they don't understand.


On a brighter side I want you to know that I still have my sense of humor. If you take the time to spend with me you will see that. I love to tell that joke to make another's face light up and smile at my wit. I am fun to be with if you will spend the time with me on my own playing field; is this too much to ask? I want nothing more than to be a part of your life. I have found that I can be a strong friend in many ways. I am your friend, your supporter and many times I will be the one to do the research for your latest project; many times I will be your biggest fan and the world will know how proud I am at your accomplishments and how honored I am to have you in my life.

All I ask is that you become educated about fibromyalgia. I am someone in your life that suffers from fibromyalgia. You may think you know everything there is to know about it, but there is more information out there than you think. It is more complicated then you think, and it is more life changing then you think.




"Lend a helping hand. If you want to be helpful to someone with fibromyalgia, just ask what you can do. Be flexible with invitations and plans that you have made. Understand that sometimes the pain of fibromyalgia is overwhelming. Be active. Accompany them to a doctor's appointment and take an active interest in their treatment. You can take notes at the doctor's office and then review your notes together at home. Don't take things personally. Some people with fibromyalgia suffer from sudden mood changes. Try not to take these mood swings personally as they are part of the syndrome."

So you see, you and I are not that much different. I too have hopes, dreams, goals and this demon Do you have an unseen demon that assaults you and no one else can see? Have you had to fight a fight that crushes you and brings you to your knees? I will be by your side, win or lose, I promise you that; I will be there in ways that I can. I will give all I can as I can, I promise you that. But I have to do this thing my way. Please understand that I am in such a fight myself and I know that I have little hope of a cure or effective treatments, at least right now.

Thank you for spending your time with me today. I hope we can work through this thing, you and me. Please understand that I am just like you.

One of my favorites!  I don't run and can't walk 5K due to my disability: Fibromyalgia and Degenerative Disc Disease but I can go and cheer them on and love seeing the costumes!!  Aug. 3rd early in the morning!

History of Ventura County Fair & Seaside Park
 The first Ventura County Fair was held in 1874. Prior to being
held at the Ventura County Fairgrounds, it was held at
Pierpont Bluffs and Hueneme, with the fair initially being
held in October, rather than August. In the early years,
the main attraction was horse racing.

In the 1970s, there was a plan to move the fair
to Camarillo, CA but that never happened.


The fair attracts more than 300,000 visitors each year.

I'm hoping to go on Tuesday, August 6th because it's not only SENIOR DAY but it is the day for the disabled (like me) as well.  I just need to get a wheelchair for this day.

Wordless Wednesday: AKC Canine Good Citizen and Sandie on the Dunes

We live at the beach and take her on the Sand Dunes! This is her starting position!  


Now she's hiding in the reeds!


She's out of breath from playing CHASE with us!

Now she's coming down the Sand Dune to pretend that she's coming to us when called, but...


She's off to play CHASE again! (She really does come to me when I'm calling her and this is a day of play that you see and my husband is chasing her in this picture!)
Now she's coming to me!  That rascal!


This is the exit area from the dunes and now she does her last "marking" and then we go home!
